I believe in carrying less papers when I travel. Is the e-copy of my policy valid?

Yes if you have valid policy which is not expired. You can keep the e-Copy as well during your travel.

Yes soft copy of the insurance policy as valid and legal document and in the current scenario of online insurance issuance of soft copy is common.
